Tasting Notes

Aged five years sur lies. Lively, formal and energetic bubbles. Nose of white fruits, citrus and zest of orange. In the aeration a biscuit, grilled almond and peach syrup bouquet opens. Harmonious yeast and acidity. Hint of marzipan tertiary note.

50% Chardonnay/50% Pinot Noir 


Assemblage

Dosage= 8.8g/l

Total acidity= 4g/l

Residual sugar= 1.9g/l 


Pairing

Fried chicken, french fries, oysters and Maine lobster rolls. Best enjoyed at 46℉

Cédric Guyot is a grower producer, Vigneron Independent from the Côte de Sézanne sub-region of Champagne, France. He vints a 5.80 hectare, three-generational vineyard growing the same vines his grandfather planted in 1965.
